Pineapple Chicken Stir Fry Recipe

This pan-fried Hawaiian chicken loaded with pineapple chunks will make your mouth water! Super juicy on the inside and with a sweet and tangy coating on the outside, this is one of the most flavorful piece of chicken you’ll ever have. Best of all? You can add more veggies (or use cauliflower rice) and skip the rice altogether.

My whole family loves pineapple! We enjoy freshly cut pineapple for breakfast, always eat Dole Whip at Disneyland, and we even like pineapple on our pizza!

So, when I realized I could give my kids pineapple for dinner (and sneak in some protein and vegetables), I knew I had a winning dinner combination!

We always eat this Pineapple Chicken Stir Fry over hot white rice that we make in our amazing Zojirushi, but you can also use any rice cooker, an Instant Pot, or cook it on the stove.

Hawaiian Pineapple Chicken FAQs

What does pineapple do to chicken?

Fresh pineapple has an enzyme called Bromelain that breaks down chicken. That’s why a lot of recipes (like this Pineapple Chicken Stir Fry) uses canned pineapple instead of fresh pineapple.

What goes with chicken stir fry?

We always eat it over a bed of hot sticky rice. But, you can also put it on top of fried saimin noodles or cooked ramen noodles.

How do you stir fry chicken without drying it out?

If you tend to get dried out chicken, try sprinkling corn starch or flour on your chopped up chicken pieces before stir frying on its own. This can help seal in the juice.
