Hawaiian BBQ Pineapple Chicken Recipe
Ingredients for your Hawaiian BBQ Pineapple Chicken Thighs Recipe:
- 2 pound boneless, skinless chicken thighs
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1 (20 ounce) can sliced pineapple in juice, drained but juice reserved
- ½ cup barbecue sauce
- ⅛ teaspoon red pepper flakes
How to Make Hawaiian BBQ Pineapple Chicken
- Preheat the oven broiler.
- Place a large (12 inch), oven-safe skillet over medium-high heat. Add the olive oil and allow to coat the pan.
- Salt and pepper the chicken thighs on each side. Add to the pan and brown on both sides until almost cooked through.
- Remove the chicken from the pan. Using the reserved pineapple juice, deglaze the bottom of the pan by pouring the juice into the skillet and scraping the bottom with a wooden spoon.
- Add the barbecue sauce and red pepper flakes.
- Dip the chicken in the barbecue sauce and arrange around the skillet. Place sliced pineapple over chicken.
- Transfer the skillet to the oven and broil the chicken until the sauce is caramelized and the edges of the pineapple are golden.
- Garnish your BBQ pineapple chicken with sliced green onions.

Hawaiian Pineapple Chicken FAQs
Fresh pineapple contains an enzyme called bromelain that can leave chicken a bit mushy. That’s why many recipes (like my Hawaiian BBQ Pineapple Chicken) calls for canned pineapple.
Canned pineapple juice is pretty awesome for infusing some tropical flavor into your chicken without leaving it mushy. You’ll just want to make sure not to use it when marinating chicken overnight. However, fresh pineapple juice still has the bromelain enzyme that will break down chicken.
While they aren’t as healthy as fresh pineapple, you can choose healthier versions. Look for canned pineapple that has no added sugar or that’s in fruit juice instead of syrup.
