Pineapple Chicken Stir Fry Recipe

This pan-fried Hawaiian chicken loaded with pineapple chunks will make your mouth water! Super juicy on the inside and with a sweet and tangy coating on the outside, this is one of the most flavorful piece of chicken you’ll ever have. Best of all? You can add more veggies (or use cauliflower rice) and skip the rice all-together.

My whole family loves pineapple! We enjoy freshly cut pineapple for breakfast, always eat Dole Whip at Disneyland, and we even like pineapple on our pizza!

So, when I realize I could give my kids pineapple for dinner (and sneak in some protein and vegetables), I knew I had a winning dinner combination!

We always eat this Pineapple Chicken Stir Fry over hot white rice that we make in our amazing Zojirushi, but you can also use any rice cooker, an Instant Pot, or cook it on the stove.

Pineapple Chicken Stir Fry Ingredients

  • 2 tablespoons olive oil, divided
  • 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • Salt and black pepper, to taste
  • 1 small onion, cut into 1-inch pieces
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 clove garlic, minced
  • 1 (20 ounce) can pineapple chunks in juice, juice reserved
  • ¼ teaspoon minced ginger
  • ¼ cup liquid aminos or soy sauce
  • ⅓ cup chicken broth
  • ⅓ cup gluten free hoisin sauce
  • ¼ cup brown sugar

How to Make Pineapple Chicken Stir Fry

  1. In a large (12 inch) skillet over medium-high heat, pour 1 tablespoon olive oil and heat until it shimmers. Season chicken with salt and pepper. Brown chicken on all sides until cooked through, about 8 minutes. Remove from the skillet and keep warm.

  2. To the skillet, add the remaining oil. Then add the onion, bell pepper, and broccoli. Cook for 5 to 8 minutes or until the vegetables begin to soften slightly. Stir in the garlic.
