I knew I wanted to create a Hawaiian-inspired pancake, but I couldn’t get the flavor combination right. It was too coconut-y (if that’s a thing), too sweet, or too dense. But after some tests, I can finally say I found it.

If you can get your hands on them, very ripe bananas will work.

2. Add a Splash of Coconut Milk
This is what gives it the coconut flair without making it too heavy.
3. Be Generous with the Guava Jam
The Hawaiian guava jam is what brings this whole dish together; it’s also mind-blowingly good. So make a large batch, you’ll thank me later.
Treat the guava jam like a “guava syrup” in place of a maple syrup. So go crazy with the guava jam like you would with a maple syrup on your usual morning pancakes.

Guava fruit can be difficult to find in some places. So it can be frustrating when many guava jam recipes require the fresh fruit.
However, you don’t need it to make this guava jam recipe. You just need some guava juice available at most Asian and Latin stores.

Pour it into a small pot over medium high heat, along with a sprinkle of pectin. Stir to combine and bring to a gentle simmer. Then, let it cool.
That’s it. The easiest jam you’ll ever make.
Treat this like a “guava syrup” in place of your usual maple syrup, but just in jam form.

Hawaiian Pancakes Ingredients:
- 1 Ripe banana, mashed
- 1 ½ cups flour
- 2 Tsp baking powder
- 2 Eggs
- 1 Cup coconut milk
- 3 Tbsp butter, melted
Optional toppings: extra chopped macadamia nuts, toasted coconut, or crushed pineapple.
Guava Jam Ingredients:
- 1 Cup guava juice
- 1 Tbsp pectin
How to Make Hawaiian Pancakes
In a small pot over medium heat, bring the guava juice to a gentle simmer. Sprinkle with the pectin and stir to combine. Let it simmer for 5 minutes, stirring constantly. Remove from the heat and let it cool down completely.
In a large mixing bowl, combine the banana with the eggs until evenly incorporated. Add the milk and butter and whisk to combine.
In a separate bowl, mix the flour with the baking powder. Slowly pour the wet ingredients over the dry ingredients and stir until barely incorporated. Don’t worry if there are some small lumps left.
Heat a skillet or a large griddle pan over medium heat and brush with oil. Pour about ¼ cup of thick batter onto the hot griddle pan and cook for 2 minutes. Flip and cook for 40 seconds more. Repeat the process with the rest of the batter.
