My family is all about Hawaiian fruit as soon as summer rolls around! We love the bright flavors and it always reminds us of our Hawaii vacations.

Out of all the tropical fruits, pineapple is definitely one of favorites. We love incorporating it into summertime desserts like bite-size Pineapple Tarts, Homemade Pineapple Ice Cream, and Dole Whip!

As the weather really starts to heat up, my kids are all about the popsicles!

But, most of the store bought popsicles have tons of sugar and artificial flavors. Since we eat a LOT of popsicles in the summer, we’re starting to make our own.

This homemade pineapple popsicle recipe has no added sugar and it’s completely vegan.

I recommend getting some popsicle molds if you are planning on making lots of popsicles this year. They have lots of different shapes and sizes.

This is a very basic pineapple popsicle recipe that just has 2 ingredients: pineapple and coconut milk. If you want to punch it up a little bit, you can add shredded coconut, li hing mui powder, or other chopped up tropical fruit.

Yes! You’ll want to chop them into bite-size chunks first and they put them on a baking sheet in the freezer. Once they are completely frozen, put them into an air-tight freezer container.

Does freezing pineapple destroy the enzymes?

No. While cooking pineapple (or anything) does diminish enzymes, freezing it keeps the enzymes in tact. Frozen pineapple is a great source of vitamin C, vitamin B, and fiber.

How do you make popsicles creamy and not icy?

If you want to make these pineapple popsicles even creamier, just add in some cornstarch along with the coconut milk.

What’s the Best Popsicle Mold?

There are tons of popsicle molds available and it can be hard to know which is the right one to buy.

It’s made out of sturdy silicone, which makes it easy to move it from the counter to your freezer without having to put anything underneath it.

Plus, the silicone has a little bit of give, so you can squeeze the bottom of the molds to help get the popsicles out.

Oh, and the lid is awesome! The sticks only go down as far as you put them, which is nice.

  1. Blend 1 cup of pineapple with the milk in a blender until smooth.
  2. Turn off blender and fold in chopped pineapple.
  3. Pour into popsicle molds.
  4. Freeze overnight.
